Fondant gives cakes a smooth, flawless matte finish, making it a great base for further decorations -
silk ribbons, beading and intricate piping designs. It can be folded, pleated or draped, and used for
ribbons, flowers and other decoration. Fondant is like sugar play dough, it is rolled out in sheets and
applied to a cake that has been coated in Butter cream.
It has a somewhat marshmallowy kind of feel in the mouth and the texture is somewhat like play dough or
pie crust in handling. Rolled fondant is rolled out just like pie crust and is then draped over the cake
and then smoothed and trimmed. That is the why it doesn't have a top border but instead has a smooth edge.
They tend to be more expensive than their butter cream cousins but if it is the look you want you won't be
happy with anything else.
